Review: The Swan Inn at Islip is a must try Oxfordshire pub | Oxford MailChef Patron of The Cygnet at the Swan Inn Paul Welburn (previously awarded Michelin stars at The Oxford Kitchen 2018 and Rhodes W1 2008) has trained and worked with some of the best chefs in the UK, cooking gently nostalgic British dishes with modern twists with influences from abroad. His career has already spanned top restaurants and now is focused on launching and evolving The Swan Inn, already in the Michelin Guide, to showcase his passion for seasonal and flavour driven dishes once again.

MICHELIN Guide’s Point Of View

Owned by one of the villagers, this traditional-looking pub is not all that it seems; instead of walking through the door and finding yourself at the bar, you’ll now find yourself facing the open kitchen. Sit in the lounge for ‘English tapas’ or head through to the Cygnet restaurant, where fairy lights hang from the beams and art is for sale on the walls. Modern British dishes feature on two 4 course set menus – one vegetarian – and you can mix and match between them. Colourful dishes have interesting textures, temperatures and tastes.
